A nostalgic vegan recipe: the BEST chocolate chip cookies I call Rebecca

If I sound a bit too excited about these cookies, I’m sorry but I can’t help myself! I do have reason to be though, because

1) I’ve been looking for a chocolate chip cookie recipe even before I became vegan that gave me thick cookies that were crunchy on the outside and chewy on the inside, and

2) I got my order from The Doughnut Family this morning and as I’m writing this, I’m indulging in a vegan chocolate glazed doughnut. Sooo good!

I’ve got a really sweet tooth and finding the treats I liked to eat before I became vegan has been something I’ve been determined to find, whether it’s bought or homemade by my own two hands. Luckily for me, my Aussie vegan friends have been at it for longer than I have and made the perfect chocolate chip cookies that are out of this world.

Dairy free and vegan delight: garlic and herb cashew cheese recipe

I’ve spoken freely about my food intolerance and one of the most problematic ones for me is my lactose intolerance. You can’t really have pasta or pizza without cheese, creme brûlée without cream and milk or mushroom soup without cream. I’ve really come to appreciate the different types of cheese you can get in the shops and it’s something I really enjoy adding to my meals.

I wasn’t sure what to replace cheese with as a dairy free/vegan alternative…until I discovered the wonder of vegan cheese through The Buddhist Chef. Now, I’m pleased to say that my first attempt at making vegan cheese has been a success and I’m sharing my altered recipe with you.

How to make homemade spicy gỏi cuốn (Vietnamese summer rolls)

Ever since I posted the quick and simple healthier eating recipes, I’ve been more aware and conscious of my eating habits and have been trying to choose healthier options from snacks (like gently baked strawberries and sweetened with apple juice instead of sugar from Urban Fruit) to meals (as much as possible, use fresh ingredients without added condiments like soy sauce salt, or oil.

One of my favourite things to cook are Asian dishes, because let’s face it, when you’ve been raised and grew up eating Asian food, you’ll need to satisfy the craving occasionally. One of my favourite things to make that is fresh and doesn’t involve deep or shallow frying, or oil-inducing methods of cooking, are Vietnamese summer rolls or gỏi cuốn.

My simple go to East meets West dishes

When I set myself a healthy eating resoultion, I knew the way I cook my food and my bad habits where I automatically reach for the soy sauce to flavour my white rice or when I’m shallow frying some mushrooms with herbs, I’ve also made my favourite Chinese chicken dish you cook with some soy sauce, a can of Coke and sugar (honestly, I’m serious!) my mum made one of my favourites, Coke Chicken (a similar recipe can be found here from Nigella).

The aim is to fine quick and simple recipes that are also a healthier option to using additive or ingredients that require added salt (including soy sauce) or sugar. These past couple of weeks, I’ve been trying to create recipes of my own by throwing together ingredients we’ve got in the fridge that needs used up and finding alternative ways to get a full and flavoursome dish without those dreaded salty or sweet stuff.

Homemade lemon drizzle cake

When it comes to desserts, I’m never one to refuse. Even when I’m full from a meal and feel like I can’t have the third course, I can’t resist a bite (…okay, maybe more than one) of someone else’s that just tempts your taste buds. One of my favourite things to do is bake: macaroons, cakes, biscuits, pudding, or even sweets that don’t need baking like polvorons.

I used to delight in baking occasionally for my colleagues, so much so that every now and then, I get hints that it’s been a while since I baked. I can honestly admit to the fact that I use The Hummingbird Bakery Cookbook quite a lot, but for those recipes that I can’t get, All Recipes UK is a great site for tried and tested recipes shared by everyday people who just love to cook and bake.
